They look just barely better than the AI-generated slop we're dealing with today.

That's where fan reaction gets you. Fans didn't really like him? He's a goner. Devs wanted Imoen to bite the dust but found out fans loved her? Quickly re-write the story to keep her around. Audience pandering was always a mistake. They should have told the story they wanted and brought their vision to light, not an inferior too-many-cooks rendition of it.
The real sad part is that even today, experienced players shit on Khalid from a gameplay perspective. In fact, he's one of the most capable and flexible companions.

Back then bioware was a smaller company and you could just replace them with your own custom ones so it got a pass although yeah they're not that great.

Not much would change outside of some different hair colors, no hamster for minsc and everyone looking more solemn while saying stupid shit.
