Norma explained it in the Return. It's all made on site with fresh ingredients. Which sounds obvious enough but people just don't do that shit very often. Crust isn't the easiest to make and it's time consuming. It's easier to just buy canned fruit than be a stickler for local produce. But fresh crust and ripe, juicy fruit are so much better than frozen and canned.

And you know this. You've had frozen pizza and canned food before. The dough just never rises quite right and the food's perfectly edible but it always deteriorates a little. Fresh is best, we just forget sometimes because we don't get fresh very often any more

Retard. The world's best pies are made in people's home kitchens. A good locally owned diner is practically a home kitchen with more space and appliances. Bakeries are essentially pastry factories.

To answer your initial question though, the answer is love. Passion for baking can be tasted in the final result because love is poured in during the cooking process. This is not something that can be taught or gleaned from recipes, it requires a genuine love for cooking and making people happy. It stands to reason Norma possessed this quality.
