In terms of themes I always thought it's a continuation of man vs non-man theme that Tark explored in Solaris. Similarly to Solaris here the technology caused humans to connect with something beyond humanity which nonetheless was sort of living. The Zone is overrun by nature despite it being anomalous and hazardous. Main characters are trying to essentially utilize the power manifesting in the place for their own gain, only to realize they're dabbling in something beyond them, something they shouldn't interfere with or something that they don't "deserve". At least not their generation. There's also implied influence of the Zone itself on humanity with the girl developing telekensis, possibly some sort of "evolution". I think it is possibly related on Tark's views on religion, where spiritual is somethign that is out of the humanity's grasp fully, but it is possible that people will "evolve" and become closer to spirituality. Her telekenesis is sort of a mircale.
On the topic of long windin dialogues, whilew they often discuss relevant things to the film's themes it's not in fact essential, the dialogue is in itself more of a formal tool, a way to create "heightened" feel, atmosphere. In fact Tarkovsky was openly opposed to things like metaphors, so neither his visuals nor the often strange dialogue are symbols for something, it's more about the feeling. Tark even critiscized his own work (Ivan's Childood) for being overly metaphorical. btw saying all this it is not my favourite Tark movie, not even close really, yeah it's often quite gorgeous and interesting but there are moments that i find to be dragging and i also think in Solaris similar themes were more interestingly explored, Stalker feels a bit like a transitional film from earlier more etheral and lighter Tark and late Tark (well his last two films basically) who is apocalyptic and dark, depressing
in Nosthalgia and The Sacrifice he used Bergman's cinematographer and the change is very noticeable, the films are more minimalistic, and this minimalism alread appeared in Stalker as compared to all of Tark's previous work, the colours in his last two films are also much greyer, more drab, it was an interesting changeup althought not my preferred Tark
