Dave Hurwitz has a channel (and a website) for any recs you'll need, pieces for beginners, individual recordings, complete recordings and cycles etc.

Goldberg Variations is a piece by Bach, there are various recordings of it but it's easy to find the most revered and acclaimed ones (just ONE thing: avoid Glenn Gould). Pierre Hantai for example is known for (one of) the best harpsichord recording of Goldberg Variations. IDK who tf steinblatt is.
(BTW Bach can be hard to get into, definitely worth it but start somewhere else unless you're really commited).

Basically Amazon reviews. Or classicstoday.com for reviews by critics such as Hurwitz. Labels (like Deutsche Grammophon, Hyperion, Decca, Sony classical) usually offer top tier recordings so can't go wrong with that. And channels that guy linked too.
You now have more than you need so don't be overwhelmed and pick just a single source.

Yeah you can't appreciate (most) classical music that way, you have to appreciate it like you watch a film, by fully paying attention. I usually don't listen to anything whilst playing since it's impossible to truly enjoy both.
