You're sleeping on a world of flavour my friend. West Africans have some amazing food that nobody recognises. Try Shito paste for instance. It has a depth of flavour that completely eclipses its other competitors like SE Asian shrimp paste.

The Silver Spoon from Phaidon is a really good book, it is more or less a collection of recipes from both italian households as well as italian restaurants iirc. The english version I found on libgen uses US units and having a metric version of the book the conversions seem suspect, so keep that in mind. It's the one cookbook I found genuinely useful for italian cooking.

I make an afro-carribean jollof with prawns and scotch bonnets that I lifted from a Duncan Welgemoed book. The chillies are an absolute pain in the ass to get in Aus though
