I did a chicken one once for shit and giggles, I had to remove the entire skin of a large chicken in one piece, debone the whole thing, add mushrooms then wrap it in foil like a bombon leaving it in the fridge for 4 hours until it could keep it's shape like a big chicken sausage, I was supposed to Bake it but I grilled it instead

I like making ballotines - tunnel boning a bird is fun and you get the bones for stock. I haven’t done the traditional galantine veal and pork stuffing yet, though. Also great, though non-traditional, for Thanksgiving turkey.
